THAI MUSHROOM SOUP

  • 200 grams Mushroom / cut in half(oyster,shiitake or enokitake)
  • 2 medium sized shallots
  • 2 pieces of medium size dried pepper
  • 2 piece of lemon grass
  • 1 pieces of Galangal
  • 3 tablespoons soy sauce
  • 2-3 tablespoon of lemon juice
  • 3 cup of vegetables (or chicken) stock
  • 1 tablespoon oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • Cut the shallots in half and put them in the hot oven to cook until gets brown.
  • In the medium size pot, put oil and pepper and start to roast for a minute.
  • Let’s add our vegetable stock and cook until boil.
  • Add shallots, lemongrass and galangal inside.
  • Add salt, sugar, soy sauce and chopped mushrooms. Boil for 1-2 minutes until the mushrooms are cooked.
  • Serve in the soup bowl. Bon Appetit.

CHICKEN AND MUSHROOM RICE

  • 500-grams sliced white mushroom (Portabella or Horse mushroom)
  • 2 medium size chicken breast (Approximately 150 grams)
  • 150-gram rice
  • 500-gram chicken stock (or veggie stock)
  • 1 medium-sized onion
  • 1 piece of basil leaf
  • A few pieces of parsley leaf (to decorate the rice)
  • 2-3 spoonful olive oil
  • 1 tea spoon salt
  • Let’s chop onions first and then cook until softened.
  • Let’s add the mushrooms and when it gets soft add chicken stock and rice to boil.
  • Let’s continue boiling until the water is reduced and let it rest.
  • In another pan, roast the chicken breasts and then chop them. Then put them into the rice and mixed it.
  • Place the tray properly and put the parsley leaves on it.
  • Bon Appetit.

ITALIAN STYLE MUSHROOM PASTA

  • 250 grams mushroom (any)
  • 1 pack pasta (preferably spaghetti)
  • 250 grams cherry tomatoes divided into two halves
  • 4-5 pieces of chopped garlic
  • 1 medium sized chopped onion
  • 2 teaspoon tomato paste
  • 1 tablespoon oil
  • 1 tablespoon salt
  • Half tablespoon of black pepper
  • 1 tablespoon chopped rosemary
  • 1 tablespoon chopped fresh thyme
  • 50 gram Grated parmesan cheese
  • Let the pasta boil well and drain water, and then place it on the serving plate.
  • In another saucepan, cook the onions and garlic in oil for a few minutes.
  • Let’s add the mushrooms and cook it until the brown colour appears.
  • Add tomato paste, cherry tomatoes, salt, rosemary and black pepper and mix for about 7-8 minutes.
  • Add this mixture to the pasta on the serving plate. Let’s put fresh thyme leaves and grated parmesan cheese on it. Bon Appetit.

INDIAN STYLE MUSHROOM CURRY

  • 200 gram sliced white mushroom (button,shiitake or horse mushroom)
  • 2 pieces red or green pepper divided into two halves
  • 1 teaspoon coriander powder
  • 1 pieces of dried chili
  • 1 piece of cardamom
  • small piece of cinnamon
  • 1 medium sized chopped onion
  • 2 pieces of medium-sized chopped tomatoes
  • 1 teaspoon ginger powder or chopped fresh ginger
  • 1 teaspoon garlic powder or chopped fresh garlic
  • 1 teaspoon red hot pepper
  • 1 teaspoon turmeric powder
  • Half a glass of water
  • Half cup milk
  • 1 tablespoon butter
  • 1 teaspoon curry powder
  • salt
  • black pepper
  • Cook the sliced mushrooms in a saucepan with butter for 3-4 minutes. Add the peppers and mix well. Let the peppers and mushrooms soften and put them into a tray.
  • Put oil, coriander powder, cinnamon, cardamom, chillies, red pepper powder in an empty saucepan and let it roast for 30-40 seconds.
  • Add garlic, ginger purees, onions and cook them. When the onions change colour, add tomatoes and cook until soft. Put mixture on a separate plate.
  • In a separate pan roast the red hot chilli powder, curry powder and turmeric powder for 1-2 minutes. Add both mixtures on the plates into the pan and cook for 2 minutes.
  • Then add half a glass of water and mix until it boils. Turn the heat down until water reduce. Then add half a cup of milk and cook for 2-3 minutes and rest. Put it on the service plate. Bon Appetit.
